Today I bring you something special: 4 breakfast recipes that are quick, healthy, delicious and, best of all, economical. Perfect to start the year fulfilling our resolutions of eating well without sacrificing flavor or our wallet. So, prepare your ingredients, put on your apron and join me.

Recipe 1: Cottage Cheese and Natural Yogurt Toast with Red Berries and Walnuts
Recipe 2: Avocado Toast with Egg, Cucumber and Smoked Salmon
Recipe 3: Oatmeal and Banana Pancakes
Recipe 4: Golden Milk

Ingredients Cottage Cheese and Natural Yogurt Toast with Red Berries and Walnuts (2 servings):
2 slices of whole wheat bread.
100 g of cottage cheese.
2 tablespoons of sugar-free natural yogurt.
1 teaspoon orange zest
100 g red fruits (strawberries, blueberries, raspberries).
2 chopped walnuts.
Honey or stevia to taste (optional).

Ingredients Avocado Toast with Egg, Cucumber and Smoked Salmon (2 servings):
2 slices whole wheat bread.
1 ripe avocado.
2 eggs.
4 slices cucumber.
50 g smoked salmon.
Salt and pepper to taste.
Juice of half a lemon.
Preparation:
Mash the avocado with the lemon juice, salt and pepper.
Spread the avocado on the bread slices.
Place the cucumber slices, egg and smoked salmon on top.

Ingredients Oat and Banana Pancakes (2 servings):
1 cup rolled oats.
1 ripe banana.
2 egg whites.
½ cup vegetable milk (almond, oat or coconut).
1 teaspoon baking powder.
Cinnamon to taste.
Honey or stevia to taste (optional).

Ingredients Golden Milk (2 servings):
2 cups of vegetable milk (almond, oat or coconut).
1 teaspoon of turmeric powder.
½ teaspoon of cinnamon powder.
A pinch of black pepper.
1 teaspoon of honey or stevia to taste.
½ teaspoon of vanilla extract (optional).
