83g Hazelnut powder

★Oven 
180℃/160℃
15 minutes → 1 minutes

・ Caramelized Apples
~ Granulated sugar
~ Water
2500g Apple Preserve
90g Unsalted butter
~ Streusel

★Oven 
200℃/150℃
30 minutes → 20 minutes → 5 minutes

・ Apple tea syrup
400g Water
10g Earl Grey
60g Granulated sugar
150g Apple Preserve syrup
50g Brandy

・ Chocolate Cream
300g Milk chocolate
375g Heavy cream
225g Heavy cream

・ Tea Cream
375g Milk
94g Egg yolks
68g Granulated sugar

23g Cake flour
11g Cornstarch

90g Milk
30g Earl Grey
13g Gelatin

1125g Heavy cream
90g Granulated sugar
